You're practically just opening a web page of Google Docs within Riot. You're not automatically getting E2EE just because you're accessing Google Docs via Matrix. You could do the same with things like accessing Etherpad (collaborative editing), YouTube, and Google Docs with Matrix widgets. In this case, Jitsi, or more specifically, if you're using the official server, the Jitsi instance ran by 8x8 on. you're just bridging it to another software via webapp glue.
